Kill 2 animals with one shot. Easiest way I found to complete the explosive rifle challenge rank 4 in Red Dead Redemption is to get some bait and set it anywhere, wait till the animals show up and blast them.

Even better, if you just used a hideout to get the previous rank of skill 3 enemies at one time, the sky will be filled with buzzards it should be easy to nail two at once.
